“TOKITO × Poland ~Rozbrat20~”A Japan–Poland International Collaboration Dinner Resonating Beyond History

Japan and Poland share a deep historical connection. For this special occasion, we welcome Chef Bartosz
Szymczak,Head Chef of the Michelin-starred Polish restaurant “Rozbrat20” for a one-night-only culinary experience where culture, history, sensibility, and aesthetics converge.
This event is presented as an international cultural exchange project between Japan and Poland, offering guests the opportunity to experience the beauty and sensibilities of both cultures through the universal language of food.
“Even when countries and languages differ, human sensibilities can still resonate with one another. Through cuisine, we hope to carry these cultures and aesthetics into the future.”

Background of the Event

This collaboration was made possible through a connection with Mr. Daniel Pawelek, inspired by the film “TOKITO – Innovating Chefs, 540 Days of Record”, a documentary centered around Auberge TOKITO, which was officially selected for the Warsaw Film Festival.

Daniel Pawelek is internationally recognized as one of Poland’s leading restaurateurs and is the founder of the Ferment Group, which operates several fine dining restaurants and wine shops in Warsaw.

From within the group, we are honored to welcome Chef Bartosz Szymczak, Head Chef of the Michelin-starred signature restaurant Rozbrat20, to create a truly unique evening where Japanese and Polish culture, aesthetics, and sensibilities come together.

Known for his cuisine that fuses refined European techniques with delicate creativity, Chef Bartosz Szymczak will collaborate with Auberge TOKITO’s evolving vision of Japanese cuisine and spatial artistry to present a one-night-only special course.

Beyond the cuisine itself, guests are invited to experience “TOKI” — a moment in time — through every detail, including tableware, aroma, atmosphere, and the flow of the evening.
